Navratna Peas Curry

Ingredients

1/4 cup Chickpeas
1/4 cup Black Eyed Peas
1/4 cup Kidney Beans
1/4 cup Kala Chana
1 large onion chopped finely
1 cup finely chopped tomatoes
3 tsp chopped ginger
5 finely chopped/grated garlic cloves
1 hot Green chilli cut lengthwise
1 tsp cayenne powder
1 tsp coriander powder
1/4 tsp turmeric powder
2 tsp fennel seeds
2 big cinnamon stick
5 cloves
Garam masala/Chana masala as preferred
Cilantro Leaves
Oil
Salt as per taste

Method
Soak all the beans overnight and pressure cook it well.  Heat oil in a pressure pan and add cinnamon, fennel seeds, cloves, chilli, onions, turmeric, salt, curry leaves.When the onions are cooked add tomatoes, when tomatoes are cooked, add the cooked beans, then add cayenne powder, coriander powder, garam or chana masala and stir well, add chopped coriander leaves, water and pressure cook well again.  Garnish with some chopped coriander leaves.

Macaroni and BowTie Pasta with Veggies

Ingredients
1 1/2 cup cooked macaroni and bow tie pasta
1 cup mixed veggies(celery,carrot,broccoli,spring onions,peas,1 cherry deseeded tomato)
Few dashes of italian seasonings
Garlic Salt as per taste
Mustard as per taste
Mayo as per taste
Oil

Method
Heat oil in a pan and add the mixed veggies and garlic salt and stir well then add the cooked pasta and stir well to blend.Add few dashes of the italian seasonings and stir well.The veggies itself give a great natural flavor to the dish.If preferred desired amount of mayo and mustard can be added to give additional flavor.This pasta tastes great hot or cold.

Bondas

Soak half cup urad dal in water for about 3 hrs.Grind the urad dal with salt and very little water till it is smooth and fluffy.Mix coconut flakes,black pepper corns and whole cashews with the bonda batter.Scoop out small amount of the batter and deep fry it in hot oil till done.Enjoy hot with your favorite chutney or sambar.

Tangy Potato Curry

Hope you all had a Merry Christmas and a great weekend.Here is a curry I enjoy making a lot and is a favorite of mine.

Ingredients
1 med large onion chopped
1 med tomato chopped
1 med large red potato cut in cubes(left the skin on)
1 tsp chopped ginger
3 cloves garlic chopped
1/4 tsp turmeric powder
Salt to taste
2 tbsp Oil

Wet Grind to a Fine Paste
7 roasted red chilles(add more or less as preferred)
3/4 th cup shredded coconut
Tamarind 2 blueberry size(adjust to the heat of your chillies)
11/2 tsp cumin seeds
Water

Seasonings
1/2 tsp mustard and cumin seeds each
Curry Leaves
Chopped Coriander Leaves

Method
Heat oil in a deep pan and add mustard and cumin seeds,when it splutters add curry leaves,coriander leaves,onion,salt,ginger,garlic,turmeric and stir cook till onions are done.Add the potato,tomato and stir cook for a few more mins.Add the ground paste,add water and cover cook on med heat till the potatoes are cooked well.

Eggless Fruit Cake

This is the most wonderful time of the year and also the time when schools are closed and the kids have to be entertained and one way to do is to involve them in the cooking.My little one made this by himself with almost no help from me.I gave him all the ingredients.He had so much fun mixing and baking.This is a very easy cake to make and bake.Kids will love making this one.

Ingredients
1 1/2 cups All purpose flour
1 cup Sugar
1 cup cold water
1/2 cup oil
A little more than 1/4 cup of dry fruits-Tutti Frutti and chopped Nuts
1/2 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
2 tsp lemon juice
Zest of 1 lemon and 1 orange

Method
Preheat the oven to 350 F.In a wide bowl add flour,sugar,oil,water,salt,baking soda,vanilla and mix to blend well with a spatula.Add dry fruits and nuts,lemon juice,zest from the lemon and orange and mix again to blend well.Pour it in a baking pan of your choice and bake at 350 F for about 30 mins or till a wooden stick poked in the middle comes out clean.Let it cool completely.



 Spice Powder that contain star anise,cinnamon and nutmeg can be added for more flavor.

Bread Upma

Cut 7 slices of bread in cubes and set aside.Heat oil in a deep pan and add 1 tsp chana dal and urad dal each along with 1/2 tsp mustard and cumin seeds each.When the mustard seeds splutter add curry leaves,6 red chillies and 1 med large chopped onion,chopped garlic,salt,dashes of asafoetida powder and turmeric powder.Stir fry till onions are nicely cooked.Add the bread cubes to the onions and stir well till blended and roasted slightly.Add chopped coriander leaves and stir well.The heat from the chillies and the crunch from the roasted dal and onions along with the bread make it a nice eat.
Note:I usually use multi grain bread with nuts,since I did not have it I used the plain bread.

Mozzarella Tomato Salad

Mix balsamic vinegar as per taste,1 clove garlic minced or garlic salt,fresh chopped basil leaves,fresh chopped oregano(optional),2tbsp good quality olive oil or half and half canola oil and olive oil to 1 cup mozzarella cheese and 1 cup grape tomato and give a nice stir.Marinate and enjoy with some hot soup and breadsticks or garlic bread.

White Pumpkin with Yogurt

Ingredients
3/4 th cup of white pumpkin cut lengthwise
1/2 medium onion chopped
3 serrano chilles
1/4 cup shredded coconut(add more if preferred)
1/2 tsp cumin seeds
1/2 cup beaten/blended yogurt
1/2 tsp mustard and cumin seeds each
Water
Curry Leaves
Salt to taste
Oil

Method
Grind coconut,chillies and cumin seeds adding some water and make a paste and set aside.In a pan add pumpkin,water,salt and the ground coconut paste and bring to a boil and switch the stove off when the pumpkin is cooked.In another pan heat oil and add mustard,cumin seeds when it splutters add curry leaves,onions and some asafoetida.When the onions are cooked add it to the pumpkin.Add more water if necessary.Add the beaten yogurt to the pumpkin and give a nice stir.I made some pakodas for snack so I added them to both the pumpkin curries with milk and the yogurt one.

Note:Sliced ginger can be added to the onions if preferred.

Note:Sliced ginger can be added to the onions if preferred.If coconut milk is used squeeze some lemon juice in the end.

 No I am not a vegetarian,I like some non veg foods like chicken and seafood.

 Who inspired you to cook or bake?
Cook-My Palate and of course my Mom.Bake - A good oven.

 How do you celebrate Christmas?...or a favorite holiday of your choice?
Being a Hindu,we have a lot of festivals in a year,so I have a lot of favs,I try to make it as festive as I  love,make some easy snacks and sweets.Christmas is another fav of mine,even as a child I would be fascinated by the stars hung outside the doors.I always have a christmas tree,put up ornaments,lights and bake some cookies.  

 If someone were to ask you to bring dessert to a party, what would you bring? Store bought, or homemade, and if you were to make homemade, what would you make?
Really depends on what kind of a party and what's on the menu.Store made or homemade depends on the day and my mood.I would bake a cake or some Indian sweet or even something as simple as a fruit custard/salad.

 Do you have a New Year's resolution-and will you be sticking to it?
Haven't really made any till now.Got to give it a thought.


 What is your take on organic food , is it a big deal for you ?
Well what they claim good today is not good another day.Its all about balance.There are too many contradictory reports.I do buy organic food but not entirely.One thing I do is always buy fresh.I buy from local farmers and stores that carry goods from local vendors.


 Do you time your breakfast,lunch & dinner or eat when you are hungry ?
In some cases ignorance is bliss but not in this case,I was ignorant and have skipped breakfast quite a bit,but nowadays no I know a lot better.



 How do you get new ideas for recipes?
I always like to experiment and that leads to new ideas for recipes.


 Name three things you have to use in most recipes ?
Nothing like I have to use,but I like to use tomatoes,spices,salt.



 How important is eating meals together as a family to you?
Very important.Good to have some quality time together.


You do not like a particular dish at your favorite restaurant, what will you do?

Not order it again.

Sukku Kuzhambu/Sonti Pulusu/Dry Ginger Tamarind Curry

Ingredients
5 small shallots chopped lengthwise
4 garlic pods finely chopped
Curry Leaves
Tamarind Cherry size(soak and extract water)
1 tsp Dry Ginger powder(add more if preferred)
3/4 tsp cayenne powder(add more if preferred)
1/4 tsp asafoetida
1/4 tsp turmeric powder
1/2 tsp mustard and cumin seeds each
Salt as per taste
2 tbsp sesame oil

Method
Heat oil in a kadai and add mustard and cumin seeds when it splutters add shallots,salt,asafoetida,turmeric,curry leaves.When shallots are cooked add garlic,tamarind extract water,dry ginger powder,cayenne powder,water and cook till the pulusu/kuzhambu thickens.Enjoy with hot rice accompanied by thick coconut chutney and chips.

Dry Ginger Milk/Sonti Pal/Sukku Pal

We all know the health benefits of ginger.Its widely used in all forms of medicine.I use fresh ginger a lot in my cooking and dry ginger occasionally in some of my dishes especially during the winter months.One such is the dry ginger milk.

Mix 3/4 tsp of dry ginger powder,3 tsp of jaggery/brown sugar,few pinches of powdered cardamom and few pinches of fennel powder to 1 cup of 1%milk boil and give a nice stir.Strain and enjoy hot with snacks.

Shredded Mango Pickle

Ingredients
1 1/4 cup finely grated raw mango
1/4 cup cayenne powder
3/4 tsp roasted mustard powder
3/4 tsp asafoetida
3/4 cup sesame oil
3-4 pinches of roasted fenugreek powder
Salt to taste

Method
Roast mustard seeds without oil and make a powder in a coffee grinder and set aside.Heat oil in a pan on the lowest setting of heat and then add cayenne powder,asafoetida,roasted mustard powder,salt and give it a nice stir.Add the finely grated raw mango and give a nice stir.Check for salt and add more if required.Increase the flame a bit and stir cook for a few mins till oil seperates.

Note:Add more fenugreek powder if preferred.

Mango pickle rice

Multi Flour Chapati

Mixed whole wheat flour,besan flour,all purpose flour,freshly ground oats flour and salt and kneaded into a dough, added some oil in the end.Made small balls of the dough and rolled it into chapatis and flip cooked on both sides adding some oil.Chapatis turned out great.

Snake Gourd Stir Fry

Wash,peel the skin,chop the snake gourd and set aside.Dry roast 1/2 cup raw peanuts,remove the skin and powder it coarsely in a coffee grinder and set aside.

Heat 2-3 tsp oil in a pan add 1/4 tsp of mustard and cumin seeds.When it splutters add the chopped snake gourd,salt give a nice stir and cover cook for a few mins.Then add the desired amount of cayenne powder, freshly ground coriander powder stir cook for a few mins then add desired amount of roasted ground peanut powder and 2-3 pinches of fennel powder.Stir nicely and cook for a min.Enjoy!


Note : Some chilli powders have a raw taste and smell,do not use them,instead dry roast dry red chillies,powder and add it.Same preparation can be used for some greens and certain other gourds.

Spinach Rice

Ingredients
1/4 cup chopped onions
1 1/2 cups chopped fresh spinach
1 1/2 - 2 tsp Sadaf garam masala powder(+/- per taste)
2 cups cooked basmati rice(used a colander to drain the water)
1 stick cinnamon
3 cloves
Salt to taste
1 1/2  tbsp oil

Method
Heat oil in a pan add cinnamon,cloves and chopped onions,when the onions are cooked add spinach and stir for a few mins till spinach is cooked,add salt,garam masala powder and stir a bit then add the cooked rice and stir well so the rice gets nicely mixed with spinach.Enjoy hot with some chips/raita/papad.

Cold Coffee Drink/Cold Coffee

1 cup cold 2% milk
3 tsp sugar(+/- as per taste)
1/2 tsp instant coffee powder-I used nescafe classic
Whip Cream

Method
Blend cold milk,sugar,coffee powder real well on high.Pour it in a cup and enjoy with some whip cream on top.Yum!Yum!

Mushroom Fry

Ingredients
2 cups chopped mushroom
1/2 cup finely chopped onions
3/4th cup finely chopped tomatoes
4 cloves garlic finely chopped
1/2 tsp fresh ginger paste
Curry leaves
2 sticks cinnamon
4 cloves
Salt to taste
3 tbsp oil

Dry Spices
1-11/2 tsp freshly ground coriander powder
1/2-1 tsp hot cayenne powder
3/4 tsp sadaf garam masala powder
1 tsp fennel powder
2-3 tsp fresh black pepper powder
1/2 tsp turmeric powder

Method
Heat oil in a pan and add cinnamon and cloves, then add curry leaves,  onions, salt, when onions are cooked add ginger and garlic stir cook for few mins, add tomatoes, when tomatoes are cooked add mushroom and stir cook for a few mins.  Add all the spice powders one be one and stir well,  sprinkle some water and cook till the oil separates from the gravy.  Goes very well with plain yogurt rice.

Note:If the onions and tomatoes(vine ripe) are not finely chopped add 2 tbsp oil more.

Spinach n Yellow Moong Dal Fry

Heat oil in a skillet add mustard seeds when it splutters add onions and salt,when onions are cooked add chopped spinach sautee for a minute then add the drained not overly cooked(should be aldente) yellow moong dal.Stir well and enjoy hot with rice.Adding garlic and coconut is optional.I did not add it and it tasted great.Enjoy!

Veggie Noodles

Ingredients
1 small packet ramen/maggi noodles
1 cup onion chopped
1/2 cup mixed veggies
3 cloves garlic chopped
2-3 green chilles chopped
1/4 tsp ginger paste
1 tsp curry powder
1/2 tsp chilli flavor that comes with the noodles
1/2 tsp sriracha sauce(optional)
1/4 cup coriander leaves chopped
1-1 1/2 tbsp oil
Salt

Method
Bring water to boil and add the noodles cook till almost done,drain the water and add cold water,drain the water and set aside.Heat oil in a pan add chillies,onions,salt and cook till the onions turn traslucent,then add ginger,garlic,mixed veggies and stir cook for a few mins.Then add curry powder,chilli flavor,sriracha sauce and stir cook for a few more mins.Now add the well drained noodles and stir cook till the contents are nicely mixed.Add coriander leaves and stir well.Enjoy!

Blueberry Smoothie

Blend half cup blueberries,vanilla flavoured yogurt,a slice of an apple, half cup of water in a blender.Enjoy with some crushed ice.

Spicy Okra Curry/Vendakka Kara Kulambu

Ingredients
1 cup onion finely chopped
3/4th cup plum tomato finely chopped
4 cloves garlic finely chopped
8 okras cut in 2 inch length(wash and completely pat dry before cutting)
Cherry size tamarind(soak in water and extract water)
2 tsp hot cayenne powder(adjust to the sourness of tamarind)
1 tsp coriander powder
1/4 tsp turmeric powder
1/4 tsp mustard and cumin seeds each
2-3 tbsp oil
5-6 Curry leaves
Cilantro leaves for garnish
Salt as per taste

Method
Cook okra till half done in a pan with 2 tsp of oil and set aside.Heat the rest of the oil in a deep pan and add mustard and cumin seeds,when it splutters add curry leaves,onion,garlic and salt.Cook till onions are nicely cooked and the raw smell goes,add tomatoes and cook for a few mins.Then add okras and give a nice stir.Add hot cayenne powder,coriander powder,turmeric powder,tamarind extract,1 3/4 cups of water.Give a nice stir and cover cook for about 5 mins,then open the lid and cook for another 7-8 mins till the curry gets to a nice consistency and the okra is nicely cooked.Enjoy!

Note: Pat dry the okras nicely before cutting them to avoid the sliminess.

Beetroot Curry with Egg

Ingredients
1 cup chopped onions
1 cup chopped tomatoes
1 large chopped beetroot
1 potato chopped
2 boiled eggs
1 tsp hot cayenne powder
1 tsp fresh coriander seeds powder
1 tsp fennel powder
1/4 tsp turmeric powder
1/4 tsp cumin seeds
Salt
2 tbsp oil
Curry leaves
Cilantro leaves

Grind to a paste -1
10 dry red chillies
1 tsp chopped ginger
5 cloves garlic chopped

Grind to paste -2
3/4th cup dessicated coconut
4 tsp poppy seeds(powder them first in a coffee grinder)
Water

Method
Heat oil in a pressure pan and add cumin seeds,curry leaves,ground paste,stir then add onions,salt and stir cook till onions are niely cooked,add potatoes,beetroot,coriander leaves and cook for a few mins then add tomatoes,cayenne powder,turmeric,coriander powder and cover cook for few more mins.Add the ground paste 2,add 2 cups water and pressure cook for 5-6 whistles- depending on your cooker.When the pressure is off,stir well,add fresh lemon juice(or serve lemon wedges with the curry) and add the boiled eggs(optional)or serve it separately and enjoy with rice or chapati.Happy Thanksgiving to All!

Bottle Gourd Pachadi/Sorakkaya Pachadi

Wash and peel bottle gourd and chop it in small cubes-deseed depending on the gourd.Cover cook them adding a little salt and water in a pan and set aside to cool.Heat oil in a pan add chana dal,mustard and cumin seeds,when it splutters add curry leaves,onions,salt and cook till the onions turn translucent.Mix the gourd and onions and when cool add yogurt and give a nice stir.Add chopped coriander leaves if preferred.

Bulgur Wheat Upma with Veggies

Ingredients
1 cup Bulgur Wheat
1 cup Mixed Veggies
1/2 cup finely chopped onion
1/4 tsp mustard and cumin seeds
4-5 hot green chilles/dry red chillies
Curry leaves
Coriander leaves
Salt
1 tbsp oil

Method
Heat oil in a pan and add mustard and cumin seeds,chillies,curry leaves,onions and salt.When onions turn translucent add mixed veggies and stir cook till the veggies are half cooked.Add bulgur wheat,2 cups water,coriander leaves,stir and cover cook for 10 mins till the bulgur wheat is cooked.Enjoy!

Meriyal Pulusu/Milagu Kulambu - 2

Ingredients

1/4 cup finely chopped onion
Cherry size tamarind(soak and extract water)
Salt
Curry Leaves
1/4 tsp mustard and cumin seeds each
1-2 tbsp Oil

Dry roast,Cool and Grind

1 tsp black pepper corns
1 tsp toor dal
1 tsp urad dal
1/2 tsp chana dal
8 hot dry red chillies(adjust to the tanginess of the tamarind)

Method
Heat oil in a kadai or deep pan,add mustard and cumin seeds when it splutters add curry leaves, onions and salt. When the onions are cooked well add the tamarind water, and the ground spice powder. Add 11/4 cups water and stir cook till it reaches a semi thick consistency. This can be made very quickly and is excellent to have during cold weather.

Coconut Rice

Ingredients
2 1/2 cups Cooked Rice
2 cups Fresh Shredded Coconut
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp chana dal
4 - 5 red chillies roughly crushed
1 1/2 tbsp coconut oil
Salt
Curry Leaves

Method
Cook rice and drain the water nicely using a pasta strainer and spread it in a bowl.Heat oil in a pan add chana dal,mustard,cumin seeds then add curry leaves,dry chillies,shredded coconut,salt.Pour the seasonings on the rice and give it a nice stir.Enjoy with any spicy side dish.

Note: You could use dessicated coconut instead of fresh coconut,some health stores carry very fresh and flavorful dessicated coconut.
You could also add fried papad/appalam and crush and stir them onto the rice before serving.

Urundai kuzambu

Ingredients
3/4th large onion finely chopped
1 medium tomato finely chopped
2 cloves garlic
1/4 tsp mustard and cumin seeds each
Salt
2 tbsp oil
cherry size tamarind(soak and extract water from it)
Curry leaves
Chopped cilantro leaves for garnishing

Spices
2 1/2 tsp hot cayenne powder
1 tsp fresh coriander powder
1/2 tsp turmeric powder

Wet Grind(Grind the below with enough water to a paste to make lentil balls)
3/4th cup chana dal(soak for 3-4 hrs)
1 tsp fennel seeds
1 clove garlic
4 tsp dessicated coconut
Salt

Method
Heat oil in a pan and add mustard and cumin seeds when it splutters add onions,curry leaves and salt.When the onions are well cooked add tomatoes,garlic,turmeric and cook till a gravy forms.Add the tamarind extract water,cayenne powder,coriander powder,1 1/2 cups water and cover cook for a few mins.Scoop about 12 small lentil balls of the wet grind and add it to the curry.Cover cook for 10 mins or till the lentil balls are nicely cooked.Garnish with coriander leaves.Enjoy with rice or dosa.

Sweet Rice Noodles

Ingredients
2 1/2 cups cooked cut rice noodles
2-3 tbsp Sugar
1/2 cup Sweetened Shredded Coconut
Coconut/Plain Milk
Cardamom powder as per taste

Method
Bring water to a nice boil and add the hot water to the rice noodles and set aside for a few mins.Drain the water nicely and cut the noodles with cooking scissors.Add sugar to the cut noodles.Give it a nice stir,to this add shredded sweetened coconut,cardamom powder and mix it well.You could add some coconut or plain milk to it if preferred.

Have you noticed raw unripened green bananas(not plantains) tucked under the ripe bananas in the produce section.I tried once frying them and since then have made different versions of stir fries with them.Just make sure you find the most unripened ones.Plantains can also be fried similarly,you can blanch them before frying.

Mix 1/2 tbsp chilli powder,1/2 tbsp coriander powder,1/2 tsp turmeric powder,salt and set aside.Heat 3 tbsp oil in a skillet on low flame and add the spice powders give it a nice stir and add the cut raw bananas(2), grated 5 garlic cloves.Increase the flame sprinkle a little water and flip cook them on both sides.Enjoy as a side dish, goes very well with rice dishes or dal/sambar.

If you have machine milled red chilli and coriander powder which most of the indian households have,you can use them instead.Increase the chilli and coriander powder proportionately for more spice.

Peerkangai Paruppu Kuzhambu

Ingredients
1 cup cooked Chana dal
1 cup peeled and chopped ridge gourd
1 medium onion
5-6 chopped hot green chillies(adjust as per heat preferred)
1/2 cup chopped tomato
1/2 tsp fresh ginger garlic paste
Few fresh curry leaves
Few chopped coriander leaves
Salt as per taste
1/4 tsp turmeric powder
1/2 tsp mustard cumin seeds each
1-2 tbsp oil

Method
Heat oil in a pan and add mustard and cumin seeds, when mustard splutters add chillies, onions, curry leaves, ginger garlic paste and salt. When onions are cooked well add tomatoes stir cook for few minutes then add the vegetable,stir cook for few more mins and add the cooked chana dal, water, salt if more required and finish cooking to blend the flavors well, garnish with coriander leaves.

Scrambled Egg

Ingredients
1 medium onion chopped
3/4 tsp hot cayenne powder
1/2 tsp Sadaf curry powder
2 Eggs
1-11/2 tbsp oil
Salt

Heat oil in a skillet and add onions,salt.When onions are nicely cooked add cayenne powder and stir cook for a minute or two.Add eggs and stir cook till nicely done.Add curry powder and stir cook for a min.Enjoy with chapati,rice or bread.

Pressure cook
1/2 cup yellow moong dal
3 cups water
1 tomato chopped

Tempering
1 medium onion finely chopped
3 hot chillies chopped
1 clove garlic chopped
1/4-1/2 tsp ginger chopped
1/2 tsp fresh fennel seeds powder
3/4 tsp cumin seeds
Curry leaves
Cilantro leaves chopped
1 1/2 tbsp oil
Salt

Method
Pressure cook dal with water,turmeric and tomatoes in a pressure pan.In a skillet heat oil add cumin seeds,chillies,curry leaves,onions and salt.When the onions are nicely cooked add ginger,garlic,fennel seeds powder and cook for a minute.Add this to the cooked dal and garnish with chopped coriander leaves.

Bulgur wheat pongal

In an electric cooker pan add 1 cup bulgur wheat,a little more than 1/4 cup yellow moong dal,3 1/4 cups water(adjust as per preference) and cook the contents.Halfway into the cooking process add the seasonings and stir well and cook till done.This pongal goes very well with hot chutney.
Seasonings
2 tbsp oil 
1 tsp crushed ginger,
1 tsp black pepper corns(crushed if preferred)
1 tsp cumin seeds
1/2 tsp asafoetida

Pistachio Halwa

Ingredients
1 cup Pistachio
3/4 cup sugar
1/4 cup oil
Cardamom powder
Saffron

Method
Soak pistachios in warm water for 1 hr.Grind it in a blender by adding a little water to make a paste(not too thick or thin).Heat oil in a kadai/deep pan and add the paste and stir cook for 5 mins on low flame.Add sugar and stir cook(keep stirring) for another 5 mins.After adding the sugar it will turn to a nice dark olive green color.Add cardamom powder and saffron and give it a nice stir.

Yogurt Vermicelli

Ingredients
1 cup mtr vermicelli
1 1/2 - 2 cups non fat yogurt / buttermilk
Coriander leaves - chopped
Grapes
Salt

Bring water to a boil then add vermicelli and when cooked drain the water (just as you would cook pasta).  Add cold water to the vermicelli immediately so it will not stick.  Drain the water after a minute or two.  Now add yogurt, salt to the vermicelli and give it a nice mix.  Add grapes, chopped coriander leaves and mix it well.  If you wish you could temper by heating 1 tsp oil and adding 1 tsp chana dal, 1/2 tsp mustard and cumin seeds each, when it splutters add 6-7 curry leaves, a pinch of asafoetida(optional).

Note :If you want a more creamy taste you can use 2%/Whole milk Yogurt/Sour cream

Chicken Curry

Ingredients
2 cups cubed chicken with or without bones
1 medium red onion chopped
1 medium tomato chopped
1tsp chopped ginger
4 cloves chopped garlic
1/4 cup coconut milk(optional)
1/4 tsp cumin seeds
Curry leaves
Coriander leaves
Salt to taste
1 1/2 tbsp oil

Spices
1 tsp Sadaf hot cayenne powder
1 1/2 tsp fresh coriander powder
1/2 tsp fennel powder
1/4-1/2 tsp Sadaf garam masala powder
1/4 tsp turmeric powder
1/4 tsp black pepper powder
2 sticks cinnamon
4 cloves

Method
Heat oil in a pressure pan and add cumin seeds,cinnamon,cloves,curry leaves,onions,salt and saute till the onions are cooked well,add tomatoes,turmeric,cayenne pwdr,1 tsp coriander pwdr,black pepper pwdr,fennel powder,stir and cook for a few mins,add chicken give it a good stir and add 1 cup water and pressure cook for a few whistles.Switch off and when the pressure goes off,open and add coconut milk,1/2 tsp coriander powder,garam masala pwdr,coriander leaves.Stir and cook for a few mins and enjoy with rice,roti,idli or dosa.

Cabbage Fry

2 1/2 cups chopped cabbage
1/2 cup finely chopped onions
3 medium hot green chillies finely chopped/pulsed
1/2 cup shredded coconut
1 red chilli for tempering-optional
1/4 tsp mustard and cumin seeds each
Curry leaves
Salt to taste
1-2 tsp oil

Method
Heat oil in a pan and add mustard and cumin seeds when it splutters add the red chilli,curry leaves, onions,salt, chillies and cook till the onions are nicely cooked.Keep the flame on high.Add cabbage give it a nice stir and cover cook for just a minute or two.The cabbage here gets cooked very fast.Add the coconut and give it a nice stir.Makes a great side dish.

Soyyam

Ingredients
1 1/2 cups Cooked n Mashed Green Moong Dal(should not be watery)
1/2 cup Sweetened Coconut
3/4 cup shredded Jaggery
1 - 1 1/2 tsp Cardamom Powder
1 cup All purpose flour
Salt
Oil for frying

Method
Heat a pan and add jaggery to the moong dal in it and keep stirring till the jaggery gets melted,then add the sweetened coconut,cardamom powder and keep stirring till you get a nice thick consistency.Allow it to cool a bit.In the meantime in another vessel add water to the all purpose flour and make a batter that is not too thick nor watery.You can use a blender to mix the flour so there will not be any lumps.Make small lime size balls out of the moong dal mix,dip the individual ball in the batter and deep fry them in hot oil.Enjoy it hot.This is one of my fav diwali sweets

Note: Using a laddle to pour the moong ball with the batter helps.I knew my jaggery did not have any stones in it because I have used it before.If you are not sure make a syrup to avoid stones,strain and then add it to the dal.

Murukkus with Urad Dal

Make a dough by mixing 2 cups Rice flour, 1/2 cup Urad Dal flour, Salt, 1 1/2 tsp ajwain seeds (powder it in a coffee grinder) , 2 tbsp oil by adding water a little by little. Heat a good amount of oil in a deep pan. Fill in the press with the dough and press it in a circular motion so the mix falls in the oil in strings. Flip cook on both the sides.When the bubbles in the oil subside take the murukkus out of the oil and place it on a tissue.When cooled store it in a airtight container.


Dosa with Hot chutney

Dosas
Soak 4 cups Idli rice(Nirav brand) and 1 cup Urad dal for 6 hrs and grind them nicely with salt.Let it ferment overnight.Mix nicely the batter.

Hot Chutney
Dry roast 1 tbsp of chana dal and set aside.Heat 1 tbsp oil in a skillet and roast about 15 hot red chillies first then add 1/4 onion roughly chopped,3 cloves of garlic and saute till onions are nicely cooked.Grind the chana dal,onions,red chillies,tamarind cherry size(adjust to the heat of the chillies),salt,1/4 cup shredded coconut to a nice paste by adding some water.

Heat a flat pan and make dosas or crepes with the batter.Pour some oil and cover cook for a few seconds.Open the lid flip the dosa cook for a few seconds,flip again and apply the hot chutney nicely all over the dosa.Cover it in half and enjoy with your favourite chutney or sambar.
