Greens with Potatoes

Greens and Potatoes
Ingredients

2tsps olive oil
1 bunch fresh spinach/any other green preferred
1 piece fresh ginger crushed
4 cloves garlic,crushed
1 onion,nicely chopped
1tsp cumin seeds
3 dried red chilles
salt, to taste
1 bag small whole potatoes
2 tomatoes nicely chopped

Method

Wash the Spinach well and chop into small pieces.Wash and pierce potatoes with fork.Boil potatoes in 1 1/2 cups of water.Add 2tsp of salt to the water.When the potatoes are half cooked drain the water.Heat oil in a skillet and fry the potatoes until brown aon all sides.Remove and put aside.Fry ginger,garlic,onion,dried chillies,cumin,green chillies and salt until the onion is brown.Add tomatoes till nicely cooked.Add the potatoes and stir well.Cover the pan and cook over medium heat stirring occasionally till the potatoes are tender.Add spinach and stir well.Cook with the skillet uncovered till spinach is tender.Garnish with coriander leaves and lemon.Enjoy with rice or roti.
