Avarakkai Fry

Wash and thinly cut the beans after removing the strings on it sides. Heat 1 1/2tsp oil in a skillet add 1 tsp urad dal ,mustard and cumin when mustard splutters add the chopped beans(2 1/2 cups) and salt. Give it a nice stir, sprinkle some water and cover cook for a few minutes. Add 1/4 cup coconut(I used dessicated coconut) and give it a nice stir. Makes a great side dish.

what I was most amazed about this recipe is that the avaraikai looks green after it had been fried. It generally loses color. Very nice. Where can you find avaraika here?

Sri,you can find them at the Indian stores,b'cos its cut so thin don't add much water & cover cook it .@ cham I made it as a side dish to go with something spicy so did not add chillis.Add red chillies if you like@ Binny not sure if you asked what Avarakkai was -It belongs to the family of fava beans - its the Indian broad beans.

I have never been able to find Avarakkai in the SD Indian Stores..Which store do you get it from Pushpa? Looks so fresh and I am so very eager to make it asap..
