2 1/2 cups Cooked Rice
2 cups Fresh Shredded Coconut
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp chana dal
4 - 5 red chillies roughly crushed
1 1/2 tbsp coconut oil
Cook rice and drain the water nicely using a pasta strainer and spread it in a bowl.Heat oil in a pan add chana dal,mustard,cumin seeds then add curry leaves,dry chillies,shredded coconut,salt.Pour the seasonings on the rice and give it a nice stir.Enjoy with any spicy side dish.
Note: You could use dessicated coconut instead of fresh coconut,some health stores carry very fresh and flavorful dessicated coconut.
You could also add fried papad/appalam and crush and stir them onto the rice before serving.
