Coconut Rice

2 1/2 cups Cooked Rice
2 cups Fresh Shredded Coconut
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp chana dal
4 - 5 red chillies roughly crushed
1 1/2 tbsp coconut oil
Curry Leaves

Cook rice and drain the water nicely using a pasta strainer and spread it in a bowl.Heat oil in a pan add chana dal,mustard,cumin seeds then add curry leaves,dry chillies,shredded coconut,salt.Pour the seasonings on the rice and give it a nice stir.Enjoy with any spicy side dish.

Note: You could use dessicated coconut instead of fresh coconut,some health stores carry very fresh and flavorful dessicated coconut.
You could also add fried papad/appalam and crush and stir them onto the rice before serving.

coconut rice is my favorite, it is simple easy dish, that makes you feel full and satisfied. Looks delicious.

excellent recipe, so simple & yet so flavorful,I found the papad part very interesting,have never tried that in rice,and I am such a papad fan :)
