Arugula Dal

Arugula is a green that has a peppery taste.It's loaded with vitamins and nutrients,it's a good source of Vitamin A and C to name a few.

Tempering:Heat oil in a pan and add 1/2 tsp mustard and cumin seeds each,when it splutters add onions,few pinches of salt for the onions,curry leaves and cook till the onions turn translucent.

Pressure cook 1/4 cup yellow moong dal with 2 good handfuls of organic baby arugula,5 green chillies,1 juicy tomato,half blueberry size tamarind,salt,1/4 tsp turmeric with 2 cups of water.When the dal is completely cooled down,blend it with a hand blender/mixie, add the tempering and stir well.Enjoy hot with a dollop of ghee.
