Italian couscous look like pearl shaped pasta.I combined it with mixed veggies to add more flavor.The flavors of the couscous combined with the veggies makes it a great side dish or as a main entree.
1 1/2 cups cooked Italian couscous
1 1/4 cups mixed veggies(cauliflower,italian beans,carrots,lima beans,zucchini,bell pepper)
1/4 cup chopped onions
1/4 cup chopped celery
1 vegan vegetable bouillon with sea salt
3 tbsp oil
Heat oil in a pan add onion,when onions are cooked well add celery and cook for a minute,add the mixed veggies and cook for a few minutes add the vegetable bouillon and stir cook for a few minutes till the bouillon is well blended and absorbed into the veggies.Add the cooked couscous and stir cook for a few minutes to blend well.Enjoy hot.
