Aloo Methi Sambar

Methi was a green that I never enjoyed as a child,but I was always fascinated by the way it looked and how fresh it was.Nowadays like a lot of other vegetables and greens,I enjoy the flavor of this green and can't have enough of it.Methi like other greens comes with a lot of vitamins and minerals.Adding potatoes with the skin adds more flavor and vitamins to this sambar.

Ingredients
2 cups nicely cooked and mashed toor dal
1 onion chopped 
1 tomato chopped 
1 potato boiled and cut in big cubes with the skin on(don't add too much potatoes)
1/2 cup chopped methi leaves
2 hot thai chillies slit lenghtwise
1 cup tamarind extract
2 tsp sambar powder
1/4 tsp turmeric powder
1/4 tsp asafoetida/hing pwdr
1/4 tsp toasted fenugreek seed-powdered
1/4 tsp mustard and cumin seeds each
Salt to taste
2 tbsp oil
Curry leaves

Method
Heat oil in a pan add mustard and cumin seeds, when it splutters add the thai chillies, curry leaves then add onions, salt and cook till onions are well cooked add finely chopped tomatoes when the tomatoes are mashed add turmeric,sambar powder, tamarind water, plain water and cook for a few mins.  Add the fenugreek powder, methi leaves and bring it to a boil.  Enjoy the unique flavor of methi, potato in the dal.

Note For better taste make ahead of time for the flavors to blend in.
