Chicken Fry

Pin It Now!
This is a very easy to make chicken fry with minimal chopping and an absolute favorite of mine.Goes very well with rice dishes or with rotis/parathas.Serve it up with some sliced onions and lemon for extra flavor.

Ingredients
2 1/2 cups chicken pieces(skinless boneless)
1 extra large onion chopped thinly
1 juicy large tomato chopped finely
1 lemon
1 tbsp whole black pepper corns roughly crushed
2 tsp chilli powder
1 tsp coriander powder
1/4 tsp turmeric powder
1/4 cup + 2 tbsp plain water
3-4 tbsp oil
Salt to taste

Powder & Paste
2 Cinnamon Sticks
5 Cloves
4 Green Whole Cardamoms
1 1/2 tsp fennel seeds
2 tsp dessicated coconut
5 Cashews

Add the following to the above and make a coarse paste
4 cloves garlic
1 big piece ginger
1 hot green chilli

Method
Heat oil in a deep pan and add cumin seeds, onion, salt and cook till the onions turn nicely golden add the ground paste and stir cook for a few mins then add the chopped tomatoes, turmeric powder, chilli powder, coriander powder and cook till the tomatoes are nicely mashed then add the chicken pieces, water
and stir  to blend well.Cover cook the chicken on low for 15 mins.Open the cover and stir cook for a few mins more till the chicken roasts.Add the roughly ground black pepper and stir to blend well.Add some chopped cilantro leaves and enjoy with some freshly squeezed lemon juice.
