Spinach Pepper Stir Fry

Whenever I make this I don't need to make any other dishes other than some cooked rice and some papad.It goes well mixed with hot rice and is perfect and easy to make for those busy days.

Heat 1tbsp oil in a pan add 1/4 tsp mustard and cumin seeds each when they splutter add 1/2tbsp chopped garlic(add more if preferred) then add chopped spinach,salt.When the water is well absorbed add 3tsp of crushed black pepper.Stircook for a few mins to blend the flavors well.Enjoy hot with plain rice and ghee with papad.

Note:I used 1 pack Frozen chopped spinach it works best for this stir fry.Since the leaves are chopped and frozen immediately they maintain their nutritional content much better.Chopped onions can be sauteed in the beginning and shredded coconut in the end as garnish as per taste if preferred.
