Recently returned from a road trip from San Diego-Seattle-San Diego driving along the beautiful Pacific coast.On the way back I stopped by at the Indian grocery store in San Jose.Along with other fresh veggies there were fresh drumstick leaves nicely tucked away. I had been looking for these for a while at the asian stores here.The last time I found was like few years ago.I used to hate them as a child but it is a delicacy now.The flavors of the leaves that we get here are not that strong as compared to the ones we get in India.May be that's one of the reasons I enjoy them more but I enjoyed it during my recent India trip so its probably not the flavor.These leaves are available in abundance in India and because of its huge nutritional values are cooked frequently in households.May be its the theory of supply and demand or I may have educated myself into eating nutritious food.Whatever be the reason I love eating it now and every possible opportunity I get I buy them and devour them.You can get more info on these leaves here
I made some dal with the leaves as my husband loves dal and the leaves looked perfect for making the same.Here goes the recipe..
1 cup cooked toor dal
1 cup drumstick leaves(only leaves) - roughly chopped
3-4 serrano chillies
1 onion chopped
1 tomato chopped
5-6 garlic cloves chopped finely
Blueberry sized tamarind
Few dried red chillies
1/2 tsp cumin,urad and mustard seeds each
1/4 tsp turmeric powder and asafoetida powder
Salt to taste
Heat oil in a pan add onions,garlic,salt when the onions are golden add green chillies,tomatoes,turmeric powder,tamarind and stir cook for a few minutes till the tomatoes are nicely mashed up then add drumstick leaves stir cook for a few minutes add cooked dal add some water stir to blend well.After it cools down a bit blend it in a blender.Heat oil in a small pan add urad dal,mustard,cumin seeds,red chillies,asafoetida for seasoning.Add it over the dal and enjoy hot over some rice.
