Potato Fry

There are very few people who don't like potatoes, it is a universally liked vegetable.  Be it breakfast, lunch or dinner it fits in beautifully into any dish.  Here I am with a potato dish.  This is a simple potato fry that goes very well with rice or bread.

Ingredients
2 cups Potato cut lengthwise
2 cloves garlic grated
10 curry leaves
2 tbsp chopped coriander leaves
Curry powder/garam masala as per taste
1 1/2 tsp cayenne powder
1 1/4 tsp fresh cumin powder
1/4 tsp turmeric powder
1/4 tsp asafoetida
Salt as per taste
3-4 tbsp oil

Method
Heat oil in a pan add cumin seeds,  curry leaves when roasted add potatoes stir cook , sprinkle some water  and cover for a few mins, then add all the dry spice powders, salt sprinkle some more water stir to blend well and cover cook for a few more minutes till the potatoes are cooked through.  Add coriander leaves and cook uncovered till the potatoes are nicely roasted.  Alternatively you could use precooked potatoes (just make sure they are not mushy) for a faster meal.

Wanna getaway from the hustle and bustle of Hollywood,Rodeo drive,Disneyland,Universal Studios head to Palm Springs it makes a great weekend getaway.You will find tons of palm trees,there is something spiritual about the mountains meeting the land holding those beautiful palm trees.

There are lots of things you can do in Palm Springs,there is a tram ride that is very popular.There are a lot of tours like Palm Springs City Tours,Windmill tours,Date farm tours where you can have some date shake.In addition to this you could rent bikes and go for bike rides.Strolling through downtown Palm Springs is a lot of fun.There are some unique shops,tons of roadside cafes,restaurants,cutest museums, they even have street fair once a week.To mention some eatouts give Cafe Scandia,Tylers Burgers and Shermans Bakery a try you will not be disappointed.Cafe Scandia had a booth in the street fair within an hour they were soldout.It does get very hot in summer,but fall,winter and spring are a good time to visit Palm Springs.

Italian Couscous with Mixed Veggies

Italian couscous look like pearl shaped pasta.I combined it with mixed veggies to add more flavor.The flavors of the couscous combined with the veggies makes it a great side dish or as a main entree.

Ingredients
1 1/2 cups cooked Italian couscous
1 1/4 cups mixed veggies(cauliflower,italian beans,carrots,lima beans,zucchini,bell pepper)
1/4 cup chopped onions
1/4 cup chopped celery
1 vegan vegetable bouillon with sea salt
3 tbsp oil

Method
Heat oil in a pan add onion,when onions are cooked well add celery and cook for a minute,add the mixed veggies and cook for a few minutes add the vegetable bouillon and stir cook for a few minutes till the bouillon is well blended and absorbed into the veggies.Add the cooked couscous and stir cook for a few minutes to blend well.Enjoy hot.

Mushroom rice

Do you love mushrooms?Some love it,some do not,some are relectant to try it.I happen to love it especially when prepared this way.This is one flavorful rice preparation with the goodness of the spices so when I saw fresh mushrooms in the produce section at the grocery store I got it and made this tasty rice,everytime I make it its very much appreciated and loved.
Ingredients
2 cups chopped mushroom
1 small cooked potato cut in cubes(optional)
Cooked basmati rice
1/2 cup finely chopped onions
3/4th cup finely chopped tomatoes
2 tsp ginger garlic paste
Curry leaves
2 sticks cinnamon
4 cloves
Salt to taste
4-5 tbsp oil

Dry Spices
1-11/2 tsp freshly ground coriander powder
1/2-1 tsp hot cayenne powder
3/4 tsp garam masala powder(optional)
1 tsp fennel powder
2-3 tsp fresh black pepper powder
1/2 tsp turmeric powder
Pinch of cardamom powder
Method
Heat oil in a pan and add cinnamon and cloves,then add curry leaves,onions,salt,when onions are cooked add ginger and garlic stir cook for few mins, add tomatoes,when tomatoes are cooked add mushroom,potato and stir cook for a few mins.Add all the spice powders one be one and stir well,sprinkle some water and cook till the oil separates from the gravy.Add cooked rice,chopped cilantro leaves and stir to blend well.Enjoy with raita/chips.

Lettuce with Black Bean Mango Salsa

Lettuce the queen of salads I would think is loaded with vitamin C.A fav of mine and an absolutely refreshing green.When I saw these fresh lettuce at my local farmers market,I got it and made something refreshing and gorgeous with it justifying its status in my mind.

Chop and make a salsa out of onions,tomatoes(deseeded),avocado,mango,black beans,cilantro leaves,chillies(deseeded),salt,lemon juice.Mix well.Fill in the romaine lettuce with the salsa.Top it with sour cream or ranch dressing.

Arugula Sambar

Arugula is a green that has a peppery taste to it and is widely used in salads. It is a very nutritious green and is loaded with vitamins. When added to sambar it gives a nice unique flavor that makes it a good healthy eat.

Ingredients

2 cups cooked and mashed toor dal
1 onion chopped finely lenghthwise
1 tomato chopped roughly
3  thai chillies slit lengthwise (+/- as per heat of the chilly)
1 cup tamarind extract (adjust to the heat)
1 1/2 cups water
2 handfuls of baby arugula
1/2 to 1 tbsp sambar powder (optional) or coriander cumin pwdr
1/4 tsp turmeric powder
1/2 tsp asafoetida/hing pwdr
1/4 tsp roasted fenugreek seed pwdr
1/4 tsp mustard and cumin seeds each
Salt to taste
1 tbsp oil
Curry leaves

Method

Heat oil in a pan add mustard, cumin seeds when it splutters add curry leaves, hing, chillies, onions, salt and turmeric powder.When onions are cooked add tomatoes and tamarind extract. Add sambar powder. Boil covered for 5 minutes then add the nicely cooked dal and water. Add the fenugreek seeds powder. Add the roughly chopped arugula leaves and boil for 2 minutes. Enjoy with rice, idli, dosa or poori.

Snake Gourd Stir Fry -2

This is simple yet delicious stir fry a must try with yogurt rice.Like all other veggies it is packed with its own unique goodness.I like to have some crunch to some vegetables and this happens to be one.

Heat oil in a pan add mustard and cumin seeds when the seeds pop add onions,salt and cook till onions turn translucent.Add chopped snake gourd,sprinkle very little water and cover cook for a few mins.Add shredded coconut and enjoy hot.My absolute fav with yogurt rice.

Egg Curry Fry

Ingredients
1 1/2 tsp ginger garlic paste
1 1/2 tsp cayenne powder
1 tsp coriander powder
1 tsp Sadaf Curry Powder
Curry leaves & Coriander leaves
2 tbsp oil
Salt to taste

Wet Grind
10 small purple sweet pearl onions(can find them in Indian groceries)
2 big tomatoes
1/4 tsp turmeric

Method
Heat oil in a pan and add curry leaves,ginger garlic paste and stir well then add the wet grind paste,salt and stir cook well for a few mins.Then add cayenne powder,coriander powder,curry powder and cook till the raw smell disappears.Add peeled boiled eggs and mix to blend well.Enjoy with  rice,pulkas,chapatis,parathas.Serve with some onions and lemon wedges.

Methi Dal 1

Ingredients
1 cup cooked yellow moong dal(not too thick)
1/2 cup chopped methi/fenugreek leaves
5 thai green chillies chopped finely
1/4 cup tamarind extract
3/4 cup chopped onions
1/4 tsp turmeric
1/4 tsp mustard and cumin seeds
1/2 - 1 tbsp Oil
Salt to taste

Method
Heat oil in a pan and add mustard and curry leaves.When mustard seeds pop,add onions,salt,turmeric and cook till onions are well cooked.Add methi leaves stir cook for a few minutes add tamarind extract and cook for a few mins then add cooked dal and cook for 3-4 mins.Enjoy hot with rice and a dollop of ghee or with hot pulkas.

Banana rolls with Maple Syrup

A few days back my son wouldn't let me go unless I made him some dessert,since I had the dough I rolled them out made some quick chapatis rolled banana drizzled some maple syrup and gave it to him.He totally loved it.So I made some today and served it up with some ice cream,Did it disappear?

Knead a dough out of wheat flour,water and a little salt.Roll it into circles and flip cook on both sides with some oil.Roll a banana in it and drizzle some pure maple syrup on it.If preferred nutella can be spread before rolling them with bananas.Wanted to add some nuts on the ice cream but as I said the plate disappeared.

Note:Adding ice cream is optional.Tastes good even without it.

Tofu Soup with Mixed Veggies

I made this soup with the same base as the soup with seaweed.The crunchiness and the flavor of onions along with the added flavor of the veggies makes the taste of this soup unique.This soup is also a great starter to any meal and is very easy to make.

Bring 6 cups of water to boil add the vegetable bouillon,1 cup mixed veggies(carrots,beans,peas,corn),garlic salt(add as per taste) and bring it to a good boil,along the way add cubed soft silken tofu and cook till veggies are done.Just before serving add crispy fried onion(you can find them in the grocery stores-just make sure they don't have a stale smell) and add more garlic salt if preferred.

Note:Adding soy sauce is optional.

Tofu Soup with Seaweed

Bring 3 cups of water to a boil add, firm tofu cut in cubes and bring it to a gentle boil.  Off the flame add salt, soy sauce and seaweed.  Seaweeds come in different flavors like wasabi, sesame etc (I used gim Me Brand). Cut the seaweed(1 pack) into small pieces and add them to the soup. Garnish with chopped green onions.

Bulgar Wheat Pongal

In an electric cooker pan add 1 cup bulgur wheat,a little more than 1/4 cup yellow moong dal,3 1/4 cups water(adjust as per preference) and cook the contents.Halfway into the cooking process add the seasonings and stir well and cook till done.This pongal goes very well with hot chutney.This is a repost.
Seasonings
2 tsp oil 
1 tsp crushed ginger,
1 tsp black pepper corns(crushed if preferred)
1 tsp cumin seeds
1/2 tsp asafoetida
Salt
Curry leaves

Mixed Fruit Walnut Raita

Mix plain yogurt with chopped cucumber,chopped fuji apples,chopped bananas,chopped green grapes,a good handful of fresh chopped walnuts,chopped coriander leaves,cumin powder,salt together.

Note:Chopped deseeded green chillies can be used if preferred.Cayenne powder and cumin seeds can be used for garnishing.

Arugula Dal

Arugula is a green that has a peppery taste.It's loaded with vitamins and nutrients,it's a good source of Vitamin A and C to name a few.

Tempering:Heat oil in a pan and add 1/2 tsp mustard and cumin seeds each,when it splutters add onions,few pinches of salt for the onions,curry leaves and cook till the onions turn translucent.

Pressure cook 1/4 cup yellow moong dal with 2 good handfuls of organic baby arugula,5 green chillies,1 juicy tomato,half blueberry size tamarind,salt,1/4 tsp turmeric with 2 cups of water.When the dal is completely cooled down,blend it with a hand blender/mixie, add the tempering and stir well.Enjoy hot with a dollop of ghee.

Farina/Rava Payasam

Payasam or kheer are very popular throughout various regions of India.There are so many delicious versions of them,one such is rava or sooji payasam,where milk is thickened and cooked with rava/sooji or farina as its called in the western world.Like other versions this payasam is also easy and quick to make.

Ingredients
1/4 cup rava/farina/sooji
5 cups 1% milk
3/4-1 cup sugar
1/4 cup fried cashews
1/4 cup chopped walnuts and almonds
Cardamom powder as per taste

Method
Dry roast rava and set aside.Heat milk in a vessel and bring it to a nice boil making sure not to burn it.Mix the well roasted rava in the hot milk and stir well till the rava is cooked and the payasam thickens.Add 3/4th cup sugar first and then increase gradually as per taste while stirring well.Add the fried cashews,chopped almonds,walnuts,cardamom powder and stir well.Enjoy hot or cold.

Note:If you tend to burn the milk on the stove you can cook the milk in the microwave in a wide microwave safe vessel for about 10-15 mins,the milk should thicken a bit,then you can transfer to the stove and proceed with the method.
