Chilli Pesarattu - My 200th Post

Had some leftover pesarattu batter from the previous day and wanted to make something different with it.Thought why not make some chilli pesarattu.Chopped some onions,jalapeno peppers,made some uthappams out of the batter and broke them up roughly and kept aside.Heated oil in a pan added some ginger and garlic paste,added onions,salt,peppers and sauteed till the onions and chillies were cooked then added some tomato ketchup,soy sauce,chilli paste and sauteed to stir well added the pesarattu pieces and stirred to blend well.Added some chopped cilantro leaves and enjoyed it hot.
Note:Crushed red chilli flakes can be used if chilli paste is not preferred.Ketchup,soysauce and chilli paste/flakes can be added as per taste.Happy Cooking!!

Simple Bindi/Okra Stir Fry

Wash okra and pat dry very well.Discard the top and the bottom of the okra and cut in circles and set aside.Heat oil in a pan and add mustard and cumin seeds when they splutter add chopped garlic if preferred.Add the chopped okra and stir cook for a few mins.Add salt and stir cook till its not sticky any more.Add shredded coconut and stir to blend well.Enoy!!

Note:Its very important to pat dry the okras well to make sure they are not sticky.Can be cooked for longer for a crunchy roasted stir fry.

Methi Dal 2

Ingredients
3tbsp + 3tbsp of toor dal and yellow moong dal each(a little less than 1/2 cup)
1 bunch methi greens
1 onion finely chopped
1 tomato finely chopped
2 cloves garlic chopped
1/2 tsp turmeric powder
2 tsp chilli powder
1/2 tsp of mustard and cumin seeds each
2 tbsp oil
Salt as per taste

Method
Pressure cook the dal with water in the pressure cooker and set aside to cool.Discard the roots and the hard part of the stems off the greens.Wash nicely and cut the greens and set aside.Heat oil in a pan and add mustard and cumin seeds when they splutter add onions,garlic,salt,turmeric and cook till the onions turn golden.Add chilli powder and tomatoes and cook till the tomatoes are well cooked.Add the chopped methi  and stir cook for a few mins.Add the cooked dal and stir well to blend the contents.Enjoy the methi flavor with a dollop of ghee on plain rice.

Chicken Fry

This is a very easy to make chicken fry with minimal chopping and an absolute favorite of mine.Goes very well with rice dishes or with rotis/parathas.Serve it up with some sliced onions and lemon for extra flavor.

Ingredients
2 1/2 cups chicken pieces(skinless boneless)
1 extra large onion chopped thinly
1 juicy large tomato chopped finely
1 lemon
1 tbsp whole black pepper corns roughly crushed
2 tsp chilli powder
1 tsp coriander powder
1/4 tsp turmeric powder
1/4 cup + 2 tbsp plain water
3-4 tbsp oil
Salt to taste

Powder & Paste
2 Cinnamon Sticks
5 Cloves
4 Green Whole Cardamoms
1 1/2 tsp fennel seeds
2 tsp dessicated coconut
5 Cashews

Add the following to the above and make a coarse paste
4 cloves garlic
1 big piece ginger
1 hot green chilli

Method
Heat oil in a deep pan and add cumin seeds,onion,salt and cook till the onions turn nicely golden add the ground paste and stir cook for a few mins then add the chopped tomatoes,turmeric powder,chilli powder,coriander powder and cook till the tomatoes are nicely mashed then add the chicken pieces,water
and stir  to blend well.Cover cook the chicken on low for 15 mins.Open the cover and stir cook for a few mins more till the chicken roasts.Add the roughly ground black pepper and stir to blend well.Add some chopped cilantro leaves and enjoy with some freshly squeezed lemon juice.

Plantain Fry

Today I am sharing the recipe for plaintain fry.If you grew up in the southern part of India you must have savoured this dish a lot.I make quite a few versions of fry with the plantains.Earlier I posted raw banana fry -not plantain.This time I made a fry with green plantains.This kind of stir fry goes very well with sambar,greens,mor kozhumbu or just plain yogurt.

Ingredients
2 plantain peeled and cut
1 small onion chopped roughly
1 small tomato chopped roughly
1/2 tsp chilli powder
1/4 tsp turmeric powder
Pepper powder per taste
Salt as per taste
Oil

Wet Paste Ingredients
1 serrano chilli
4 garlic pods
1 piece ginger
1 tsp fennel seeds
1 very small piece cinnamon stick
1-2 pieces coconut
Water

Method
In a vessel add the plantain,salt,turmeric and water  and cover cook till the plantains are half cooked.Drain the water and set aside.Heat oil in a pan and add the onions and cook till they turn golden,then add tomato and cook till the tomatoes get mushy.Add the onion and tomato mixture to the wet paste ingredients and make a paste.Heat more oil to the pan and add chilli powder immediately add the wet paste,salt,pepper powder and stir cook for a min.Add the plantain and stir cook till they are nicely roasted on both sides.Add some lemon juice if preferred in the end.Enjoy!

Vegetable Rice

Ingredients
3 cups semi cooked rice
2 tomatoes chopped
1 onion chopped
1 potato chopped
1/2 cup mixed veggies
4 serrano chilli chopped
1 tbsp chopped ginger
5 cloves garlic chopped
1 1/4 cups water
3-4 slices bread- cut in cubes and fried
10 cashews fried
1/4 tsp cumin seeds
1/4 tsp turmeric powder
3 bay leaves
3-4 tbsp oil
Coriander leaves chopped
Salt to taste

Wet Paste
Mint Leaves - a small handful
Cilantro leaves - a small handful
10 whole green cardamoms
1 tsp fennel seeds
4 cloves
3 small cinnamon sticks
2 tbsp shredded coconut

Method
Cook rice to semi cooked consistency,drain the water and keep aside.Heat oil in a pressure pan add bay leaves,cumin,ginger,garlic,green chillies(take half of the ginger,garlic,chillies and add it to the wet paste mixture).Add onions,salt and cook till onions turn golden add potato,mixed vegetables,turmeric powder and stir cook till the veggies are half cooked add tomatoes,coriander leaves and cook for a few mins.Meanwhile make a fine wet paste of the wet ingredients by adding water.Add the wet paste to the contents in the pan and stir to blend well.Add the semi cooked rice and plain water and stir to blend the contents well,close the lid and pressure cook for just 1 or 2 whistles depending on the pressure cooker.When the heat cools off remove the lid and add fried cashews and fried bread cubes and mix to blend well.Enjoy hot with raita.

Paneer/Tofu Butter Masala

Ingredients
1 large onion finely chopped
2 cups finely chopped juicy tomato/canned tomatoes
1 tsp grated ginger
1 tsp grated garlic
3/4 cup paneer
1/2-1 cup plain yogurt
1/4-1/2 cup ground almonds
2 tsp chilli powder
1/4 tsp of powdered cinnamon and cloves
1/2 tsp garam masala
1/4 tsp turmeric powder
6-7 tbsp butter/oil
Cardamom powder as per taste
Few dry bay leaves-optional
Salt as per taste

Method
Mix almond paste,yogurt,dry spices,ginger,garlic paste,tomatoes and salt in a bowl and stir to blend well all the ingredients.Heat oil in a deep pan and add the onions and bay leaves.Cook the onions with just enough salt for the onions and stir cook till it turns golden/roasted.Add the the wet contents and stir cook for about 10 mins-add water if necessary,till the raw smell goes away.Use a hand blender and blend the gravy.Add fried paneer and chopped coriander leaves to the gravy and cook to blend well.Cook for few more mins.Garnish with coriander leaves.Enjoy with hot rotis/parathas or rice.

Note:Soft Tofu can be replaced with paneer if preferred fry them in some oil and add them in the end.
Alternatively add ginger garlic and the dry spices along with the onions and then add the wet mixture.

Potato Stir Fry with Watercress

Today I am sharing another dish I make with watercress.This dish is quite versatile and goes well.  Watercress is a type of green that can be found in the produce section in grocery stores.It has a peppery taste-not too strong.As like any other green comes with a lot of vitamins and minerals and the goodness of antioxidants.

Ingredients
1 large cooked/baked potato with the skin on - cut in cubes
1/2 - 1 cup chopped watercress
1/2 cup finely chopped onion
1-11/2 tsp kashmiri chilli powder
1/2 tsp kala jeera
1/4 tsp turmeric powder
Salt as per taste
2 tbsp oil

Method
Heat oil in a pan and add kala jeera,onions,salt,turmeric and cook till oions turn translucent.Add the chilli powder stir to blend well,add the potatoes and stir cook for a few mins to blend well.Add the chopped watercress and cook for a few min and stir to blend well all the contents.Enjoy hot with rotis or rice.

Note:I did not add ginger garlic and garam masala because I wanted to keep the flavors of the potato and the watercress.If you prefer you can add ginger garlic and garam masala.

Mixed Bean Rice with Tofu/Paneer

Am back after a great trip to India.Totally jet lagged and waking up at weird timings.I made this quick rice dish with mixed beans hope you will enjoy it as much as we did.

Ingredients
1 1/2 cups cooked basmati rice
1 onion chopped
1/2 cup tofu/paneer
1/4-1/2 cup cooked mixed beans
1/4 tsp turmeric powder
Hot wing sauce as per taste(used Franks)
Chopped cilantro leaves
Oil
Salt as per taste

Method
Heat oil in a pan and add chopped onions,salt,turmeric and cook till the onions turn golden.Add the mixed beans,tofu/paneer and cook on high heat.When the tofu/paneer is roasted add desired amount of wing sauce,cilantro leaves and stir to blend well.Add the cooked rice and stir again to blend well.Enjoy hot!
