Nutella Crepes

Any chocolate lovers out there here is a post to please your palette and your love for chocolates.Earlier I had posted instant crepes made out of whole wheat flour and chocolate chips this time around I made them with all purpose flour.These crepes can be made quickly and you don't feel heavy after eating them.Treat yourselves and your family to these lovely and light instant crepes.

Ingredients - Serves 2
1/2 cup all purpose flour/maida
Water as needed-about 1/2 cup +/-
Few pinches of salt
Bananas cut in circles
Whipping Cream and Nuts

Make a batter out of the flour and water adding some salt by blending it in a blender.Heat a non stick pan on low flame and pour a scoop of the batter spread it around in a circular motion.Spray very less oil flip cook gently on both sides.Take it out of the pan spread Nutella to one side,spread out the chopped bananas.Squeeze the required amount of whipped cream and fold them as you wish.I folded them a bit at one corner and then brought the other two corners in.Add some nuts and fruits if you wish.
Note:Use well seasoned pan or nonstick pan for best results.These are instant crepes with no eggs enjoy them immediately or they will get chewy.

Mixed Fruit Juice

Perfect drink to quest the thirst for the hot summers. Have a sip of this fresh natural juice and feel refreshed. Enjoy these refreshingly yummy tangy juice by themselves or accompanied by a meal. Mix equal parts of sweet pineapple juice,orange juice,lemon juice with some sugar syrup in a blender. Add some ice cubes to individual serving glasses fill them with the mixed juice and top it off with some sparkling mineral water.

Drumstick Leaves Stir Fry

I had some more of these lovely leaves left so I made some quick stir fry out of it.Heat some oil in a pan add some mustard and cumin seeds when they splutter add few crushed red chillies,chopped garlic,roughly chopped drumstick leaves and salt.Stir cook for a few minutes when the leaves are cooked  add coarsely powdered roasted peanuts and stir to blend well.Enjoy with some hot rice.

Drumstick Leaves Dal

Recently returned from a road trip from San Diego-Seattle-San Diego driving along the beautiful Pacific coast.On the way back I stopped by at the Indian grocery store in San Jose.Along with other fresh veggies there were fresh drumstick leaves nicely tucked away. I had been looking for these for a while at the asian stores here.The last time I found was like few years ago.I used to hate them as a child but it is a delicacy now.The flavors of the leaves that we get here are not that strong as compared to the ones we get in India.May be that's one of the reasons I enjoy them more but I enjoyed it during my recent India trip so its probably not the flavor.These leaves are available in abundance in India and because of its huge nutritional values are cooked frequently in households.May be its the theory of supply and demand or I may have educated myself into eating nutritious food.Whatever be the reason I love eating it now and every possible opportunity I get I buy them and devour them.You can get more info on these leaves here
I made some dal with the leaves as my husband loves dal and the leaves looked perfect for making the same.Here goes the recipe..

1 cup cooked toor dal
1 cup drumstick leaves(only leaves) - roughly chopped
3-4 serrano chillies
1 onion chopped
1 tomato chopped
5-6 garlic cloves chopped finely
Blueberry sized tamarind
Few dried red chillies
1/2 tsp cumin,urad and mustard seeds each
1/4 tsp turmeric powder and asafoetida powder
Salt to taste

Heat oil in a pan add onions,garlic,salt when the onions are golden add green chillies,tomatoes,turmeric powder,tamarind and stir cook for a few minutes till the tomatoes are nicely mashed up then add drumstick leaves stir cook for a few minutes add cooked dal add some water stir to blend well.After it cools down a bit blend it in a blender.Heat oil in a small pan add urad dal,mustard,cumin seeds,red chillies,asafoetida for seasoning.Add it over the dal and enjoy hot over some rice.

Chicken and Corn Fried Rice

This is an easy chicken fried rice that can be stirred up in few minutes.Makes for a great lunch box meal. Goes very well with manchurians.

1 cup chicken cut in small cubes - I used frozen grilled chicken strips
3/4th cup frozen corn
1 bunch spring onion chopped with the roots taken off
Black pepper powder as per taste-freshly ground
1 cup cooked rice
3-4 tbsp oil
Salt as per taste

Heat oil in a pan add white part of the spring onions then add chicken and salt when the chicken is fully cooked add corn then stir cook for a few minutes on high heat add the rest of the spring onions stir add black pepper powder stir then add cooked rice and stir to blend well.Enjoy hot.
