Sambar for Dosas and Idlis

Sambar is a popular accompaniment to the most famous breakfast of Tamilnadu a southern state from India.The famous breakfast being dosas and idlis.If you love lentils and spices you will love this, add it along with some idlis or dosas,it gets even better.Idli,dosa and sambar are all a good balance of protein, carb,fat and are ideal for breakfast.
Pressure Cook and Mash the dal
1/2 cup toor dal
3 cups water
1 tsp turmeric powder

Dry Roast individually and powder finely together
10 red chillies
6 tsp coconut
5 tsp coriander seeds
4 tsp chana dal
6 black pepper corns

Sautee well and Wet Paste
1 Onion chopped
1 tomato chopped
1 tbsp oil
Soak and Extract Water
Cherry size tamarind
About 1 cup water

1 tsp mustard and cumin seeds each
1/2 tsp hing
Few curry leaves
Chopped coriander leaves
Salt to taste
Heat 3tsp oil in a pan add the wet paste,stir cook for a few minutes then add the tamarind extract,salt and cover cook for a few minutes add the spice powder,mix to blend well,add 2 cups of plain water and bring it to a boil.Add the cooked dal and more water if needed and stir to blend well.Cook for a few more minutes.In a small pan add 2 tbsp oil and do the seasoning by adding the mustard and cumin seeds when they splutter add the rest and add to the sambar.Garnish with some chopped coriander leaves.

Thank you for the comment. Sambar looks very delicious. Nice to note that there are so many versions of sambar. I am sure when tried each version has some unique taste. It is interesting to prepare something new to break the monotony, as sambar is a must for south Indians.
